HOW TO CLEAN A TRUFFLE
A Truffle is a mushroom that grows underground: it goes without saying that, when harvested, it will be covered in soil. It is good practice for those who sell truffles to sell them already cleaned, taking care to brush them, even if only superficially. But even more so to allow those who are making the purchase to check the quality of the truffle. For all these reasons, our Fresh Truffles are sold already well brushed. We do not wash them because this process could undermine their shelf life. All you need to do is clean them delicately – but carefully – a few hours before serving them at the table or using them as an ingredient, with a soft bristle brush (as for consistency, a toothbrush is fine, obviously clean) moistened with water at room temperature. White Truffles should never be immersed in water, nor cooked, nor boiled.
HOW TO STORE TRUFFLE
The Truffle must be stored in a glass jar or, alternatively, in an airtight plastic container. Inside it, it must be wrapped in a sheet of absorbent paper, which should be replaced daily. It is absolutely essential to avoid, as is erroneously reported, putting rice in the container, because this absorbs excessively the humidity of the Truffle, drying it and depriving it of its scent. Similarly, avoid storing it in oil, which favors its fermentation. The container should therefore be placed in the lower part of the refrigerator, at a temperature between 2 and 4 °C (be careful with milk-based products, such as butter and cheese, which tend to absorb the smell). Even in the best storage conditions, it is recommended to consume it no later than seven days after purchase. The rule applies: the sooner you consume it, the better the sensations offered by the Truffle.
HOW TO CUT A TRUFFLE
Truffles are not peeled with a knife and should not be cut into pieces. The best shape to enhance their flavor is the slice. There are different schools of thought about cutting, depending on whether you want to obtain a crunchy or melting effect: in the first case, the slices should be thicker and more consistent, in the second they should be very thin, almost transparent. The best tool to perform this operation is the Truffle Cutter. There are different types on the market: the important thing is that it is equipped with a smooth and sharp blade, with a slice thickness regulator for a precision cut, variable between 0.2 and 4 mm.
