The first news about the White Truffle of Alba date back to a few centuries ago found in documents of the House of Savoy and then followed also during the receptions and gifts of representation offered by Camillo Benso di Cavour as President of the Council of Ministers from 1852 to 1859 and from 1860 to 1861.

The scientific path of the White Truffle of Alba dates back to the end of 1700 when a young Doctor from Turin, the doctor Vittorio Pico, classified the White Truffle of Alba with the name of “Tuber magnatum” and adding the extension Pico regarding his surname.

The White Truffle of Alba grows in Piedmont in the Territories of Langhe, Roero and Monferrato and have been part of the UNESCO World Heritage List since 22 June 2014.

The White Truffle of Alba is considered the most prized Truffle by Gourmets around the World. The Alba White Truffle is not a cultivable tuber, it is a natural sentinel of the Territory and is harvested from October 1st to January 31st. The pleasantly aromatic scent of the Alba White Truffle makes it unique in its kind, both to the palate and to the nose.

The Alba White Truffle should be served raw, cut into thin slices on both cold and hot foods. Ideal with “Pasta Tajarin” (Tagliolini Pasta), Risotto, on Cheeses, on Raw Meat, on Porcini Mushroom Salads and Royal Pizzas. The aroma of the Alba White Truffle is particularly enhanced on Fried Eggs.
