The “Black Truffle Fine” (Tuber Melanosporum Vittadini) also called “Winter Black Truffle” or in the regional territorial context “Black Truffle Fine of Piedmont”, is probably the most well-known Truffle in International Cuisine.
The “Black Truffle Fine” has a globular shape with a brown-black rind and a reddish-black pulp, furrowed by light and thin veins, very branched.
The “Black Truffle Fine” is considered the most prized of the different variants of Black Truffle and has an exquisite flavor that is more evident after cooking. In Piedmont, the harvest takes place from December 15th to March 15th.
The “Black Truffle Fine” is also excellent raw, but is usually consumed after a short cooking and can be used as an ingredient in roasts or first courses and even with pizza.
