WHITE TRUFFLE OF ALBA – The White Truffle of Alba also called “Tuber Magnatum Pico” is considered the most prized truffle by Gourmets throughout the world. The Alba White Truffle is harvested in the Langhe, Roero and Monferrato territories, it is not a cultivable tuber and is a natural sentinel of the Territory. The Alba White Truffle has a velvety external surface, ocher-greenish in color and the pulp is white-yellow-greyish in color with thin white veins. Its pleasantly aromatic scent makes it one of a kind. The Alba White Truffle is born in Piedmont (Italy) and the harvest takes place from 1 October to 31 January.
RECOMMENDED USE – The Alba White Truffle should be served raw, cut into thin slices on both cold and hot foods. Ideal with “Pasta Tajarin” (Pasta Tagliolini), Risotto, on cheeses, on raw meat, on porcini mushroom salads and royal pizzas. The aroma of the Alba White Truffle is particularly enhanced on fried eggs.
