FRESH TRUFFLES FROM PIEDMONT – Gourmet Poker (C-Q-F-P)

F – The Black Summer Truffle, aromatic and fragrant, is used in many summer recipes.
Harvest period: from 01 June to 31 August;

C – The White Truffle of Alba (TUBER MAGNATUM PICO) is considered the most prized truffle by gourmets all over the world. Harvest period: from 21 September to 31 January;

P – The Autumn Black Truffle, aromatic and fragrant, used in many autumn recipes.
Harvest period: from 21 September to 31 December;

Q – The prized black truffle is probably the best known truffle in international cuisine. Collection period: from 01 December to 15 March.

SEASONAL TRUFFLES FROM PIEDMONT – From 01 June to 31 August

The Black Summer Truffle of Piedmont is a particularly widespread truffle and is commonly called Scorzone due to its hard and wrinkled black-brown rind. Rich in pyramidal, protruding and large warts, it has a hazelnut colored pulp and is crossed by numerous white veins with a very delicate scent. In Piedmont, the harvest of the Black Summer Truffle takes place from 1 June to 31 August.

The Black Summer Truffle, after a short cooking, can be used as an ingredient in fillings and sauces, in pasta or rice first courses, or, sliced into thin slices on salads and second courses based on meat or fish. A delicious recipe on the palate and good for our body?
