The omelette with Black Summer Truffle is a simple, elegant dish, quick to prepare (just a few minutes) and unique in taste.
Ingredients for 4 people –
• 100 g of Black Summer Truffle
• 8 Eggs
• 60 g of grated Parmigiano Reggiano
• 2 tablespoons of extra virgin olive oil
• Salt and freshly ground black pepper to taste.
Preparation of the Omelette with Black Summer Truffle –
Start by beating the eggs in a bowl, then adding a pinch of salt and black pepper and the grated parmesan, mixing everything well evenly. Then heat the extra virgin olive oil in a non-stick pan over medium heat, pour the previously beaten eggs into the pan and cook over low heat for about 5 minutes, stirring occasionally until the omelette has compacted slightly. 
Then cut the Black Summer Truffle into thin slices and distribute them on the omelette. Continue cooking for another 2-3 minutes, until the omelette is cooked to perfection.
