The White Truffle of Alba also called “Tuber Magnatum Pico” is considered the most prized Truffle by gourmets all over the World. The Alba White Truffle is harvested in the Langhe, Roero and Monferrato Territories, it is not a cultivable tuber and is a natural sentinel of the territory The Alba White Truffle has a velvety outer surface, of an ocher-greenish color and the pulp is white-greyish-yellow in color with thin white veins. Its pleasantly aromatic scent makes it one of a kind. The White Truffle of Alba grows only in Piedmont (Italy) and is harvested from 21 September to 31 January.
RECOMMENDED USE
The White Truffle of Alba should be served raw, cut into thin slices on both cold and hot foods. Ideal with ‘Pasta Tajarin’ (Tagliolini pasta), risotto, cheese, raw meat, porcini mushroom salads and royal pizzas. The aroma of Alba white truffles is particularly enhanced when paired with fried eggs.
